Bikini

Serves 10 guests

To make the Citrus Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

For the Premix (yields 850ml, enough for 10)

400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing

Method

To prepare the Citrus Syrup: Combine all the ingredients in a pan, bring to a simmer, stirring so the sugar melts. Next, remove from the stove and leave to reach room temperature fully. Decant into an sealable bottle, close it keeping it in the refrigerator, it can be stored for around one month.

To make Batch Mix: Combine all the spirits and syrup in a large bottle, allow it to infuse for 60 minutes, then strain best through cheesecloth, so it's fully clarified.

When ready to serve: Add 85ml of your cocktail base to a stirring glass packed with ice, and stir gently for about 60 seconds until cold. Filter to a chilled martini glass or similar, decorate with the cranberries and complete it with a quick spritz with the mandarin essence over the drink.
